Oden is an easy to cook meal. You just need a little time. Each family or shop uses different ingredients, there are no rules. I will show you my Oden with ingredients I can get in Hawaii. You can create your own style, get creative with it.
The Basic Soup
- 10 cup water
- Kombu (kelp)
- 4 packet of Dashi powder
- 1/4 cup soy sauce
- 2 tbsn sugar
Ingredients
- daikon radish
- turnip
- potato
- boiled egg
- chikuwa
- fish cake patty (tempura)
- kon-nyaku (yam cake)
- aburage (deep fry tofu)
Directions
- Cut kombu about 8 inch long, and knot them because you can eat Kombu later. If you don’t want to eat kombu, you don’t need to knot.
- In a large pot, put water and soak Kombu for a while until it becomes large.
- Turn on heat, add Dashi, sugar and vegetables. Cook for about 10 minutes.
- Add soy sauce and other ingredients. After soup boils again, keep cooking for a few more minutes.
- Stop heat. Cover the pot with bath towel and leave it for a few hours. During this time, the dashi flavor goes into the vegetables and other ingredients. So just be patient! Tip; this is an energy saving cooking method.
- Heat Oden again when you are ready to eat it. (actually it is better the next day)
Serve with Japanese hot mustard.
