You can use almost any kind of vegetables or sea foods to make Kakiage. Today I will use a couple of vegetables only. Keep it simple or go wild, it’s a matter of your mood and your tastes. The photos below take you from beginning to end of the relatively easy process. It sure makes a nice dish that would go well with many of the beers we talk about.
Ingredients
- green onion
- eggplant
- flour 1/2 cup
- baking powder 1/2 tspn
- dashi powder 1/2 packet
- water 1/2 cup (adjust for your ingredient moistness)
Directions
- Chop green onion and eggplant into big chunks. Soak eggplant in water for 5 min. and drain.
- In a ball, mix flour , baking powder and water briefly. Add vegetables and mix. Do not over mix.
- Drop spoonful of Kakiage batter into heated oil and cook until golden brown.
