Shumai is a national favorite food in Japan. It is very good with beer too.
To shape Shumai is not so easy for me. So, I use my secret “tool” which is an empty pill bottle. I can make Shumai much faster with this “tool”.
Ingredients for Mixture
- 1/2 lb ground pork
- 1 stalk green onion (finely chopped)
- 1 tspn ginger (finely chopped)
- 2 tspn soy sauce
- 2 tspn sake
- 2 tspn sugar
- 1 tblsp potato starch
- garlic salt for taste
Other Ingredients
- small size shrimp
- frozen green pea
- gyoza skin (Shumai skin is better)
Directions
- Make a “tool”. Cut off top and bottom of the empty pill bottle and make a 1 inch high cylinder. This pill bottle has to be a 1 1/2 inch diameter in size, which is the most common.(over the counter pill bottle)
- In a bowl, mix all ingredients for mixture very well. Put meat mixture in the center of a gyoza skin. Note; I can’t get any “shumai skin” in my local area. Use Shumai skin if available.
- Put skin with mixture on the cylinder. While gathering together the edge of skin , slide down half way in the cylinder.
- Put shrimp and pea on the meat mixture.
- Push down completely and make it firm.
- pull out the cylinder.
- Prepare a liner for a steamer. Parchment paper really works well. It needs many slits or holes for steaming.
This is how I am doing it. Fold parchment paper three times in triangle, and make several cuts at the edge. See picture. - Place a liner at bottom of the steamer pan. Put Shumai on the liner.
- Steam for 8 to 10 min or until meat cook.
