Summer rolls are very popular in Hawaii. You can use anything you like. And there are many choices of dipping sauce.
This goes quiet nicely with golden ales or crisp lagers. Not too heavy on the type as this is a fresh, tasty treat.
Ingredients
- rice paper
- boiled shrimp
- vegetables ( lettuce, basil, cilantro, mustard leaf, radish, carrot )
- somen noodle
Directions
- Boil somen according to the package direction. Rinse with cold water and drain. Set aside.
- Prepare vegetables, wash and cut.
- Soak rice paper in water for 7 seconds. Tip; I use fry pan for soak. I saw professional chef do it under running force t water, like “washing” rice paper. Do not over soak. You may need adjust to soaking time depending on the product.
- Wet the surface of plastic board lightly and put rice paper .
Arrange ingredients (excerpt shrimp and basil ) on the rice paper. - Fold rice paper half way through.
- Put basil and shrimp on the wrap at the end of folding area. See picture. Tip; This is just for decorative presentation. You can skip this process, put all ingredients at # 4 section.
- Serve with sweet chili garlic sauce or your favorite dressing.
