“Rainbow State” is an another nick name for Hawaii. We often see beautiful rainbows in the sky. There is a rainbow on the car license plate too.
People in Hawaii love to eat rainbow sushi roll. My rainbow roll is a little different to make. Usually ingredients are covered at the end, but I put them before roll.
Ingredients for Sushi Rice
- 4 cup cooked rice
- 2 tbsp rice vinegar
- 2 tbsp sugar
- 1 tspn salt
Other Ingredients
- 1 egg and pinch of salt

- fukujinzuke pickles
- cream cheese
- sliced avocado
- thin sliced smoke salmon
- nori sheet
Diretions
- Make sushi rice.
Dissolve vinegar, sugar and salt.
Pour vinegar liquid over the rice and mix well but not too much. Cool it. - Make thin egg omelet. Set aside.
- Unroll the crab stick and make it flat. Set aside.
Note; usually imitation crab is made by rolled thin fish paste. - Chop the fukujinzuke into small pieces.
Note; fukujinzuke is usually served with curry. A kind of sweet pickles and crunchy. - Mix cream cheese and fukujinzuke.
Set aside. - Spread rice on nori evenly.
Arrange ingredients (excerpt cream cheese ) on the rice diagonal. See picture.
Put plastic wrap over it and smooth the surface. - Flip over it with plastic wrap.
Spread cream cheese mixture on the nori. - Supporting with plastic wrap, roll it but not roll the plastic wrap into the rice.
- It is easy to cut the roll over the plastic wrap. Don’t forget to remove plastic wrap before putting them on the plate!
