Avocado, wasabi and soy sauce are a really good combination. I often use avocado for a substitution to mayonnaise. This is one of my favorite vegetarian dishes.
Ingredients
- 1 bundle boiled soba noodle
- 1 avocado
- 1 carrot
- 2 stalk celery
- 1/4 onion
- 1/2 tsp salt
- 1 tbsp soy sauce
- 1 tbsp wasabi
- 1 tbsp lemon juice
Directions
- Slice vegetables thin. Sprinkle salt and rub by hand. After vegetables are soft, squeeze out excess moisture very well. Set aside.
- In a bowl, put avocado, soy sauce, lemon juice and wasabi , mash and mix well.
- Combine soba, vegetables and avocado sauce.
Super Easy and super good.
